Scallop Shells for Baking: A Recipe to Try

Preheat your oven to 350 degrees. Sauté shredded carrots, shredded leek, and celery in a saucepan with some butter. Cook for a minute or two until this mixture becomes fragrant. Add some coriander and cumin to the mixture to taste. Then add a little bit of fish stock to the pan and cook gently until the vegetables are softened.

Then take the orange roe from the edge of each scallop—remove and discard the membrane. Put the roe into a blender with egg yolk until you have a smooth egg mixture. You’ll soon have a delicious dish to put into your scallop shells for baking!
