You’ll need:
˝ cup room temperature butter
1 cup thinly sliced mushrooms
3 tablespoons finely shopped shallots
1 tablespoon finely chopped garlic
1 pound fresh bay scallops
˝ cup soft bread crumbs
˝ cup finely chopped parsley
salt and pepper

Preheat your oven to 450 degrees. In the meantime, melt butter in a small skillet and add the mushrooms. Cook the butter mixture, stirring it often, until the mushrooms are wilted and begin to give up their liquid. Once that happens, you can add the shallots and garlic and cook it just a little longer. You’re nearly ready to enjoy some delicious scallops in baking shells.
Spoon the mushroom mixture into a mixing bowl. Let it cool briefly, and then add 2 tablespoons of the remaining butter, the scallops, bread crumbs, parsley, salt, and pepper. Blend this mixture well. Fill six baking shells with the scallop mixture.
Your next step is to arrange the filled shells on a baking dish or cookie sheet. Melt the remaining butter and pour it over the mixture in the baking shells. Place them in the oven and bake for ten minutes. Then place the baking shells under the broiler for about one minute until they’re nicely browned.
